Ice-cream Recipe

Jane’s ice-cream is a firm favourite in the Aberdeenshire office. Paired with a waffle cone and a sunny day makes for THE perfect combination.

  • 200g blackcurrant
  • 60g granulated sugar
  • tablespoon of cassis
  • 600ml double cream
  • 1 x 397g tin of condensed milk
  • Heat blackcurrant and granulated sugar in a small saucepan until the fruit skins burst
  • leave to cool and stir in a tablespoon of cassis
  • Whip 600ml double cream into stiff peaks
  • Stir in the condensed milk into cream
  • Alternate layers of ice cream mix with fruit mix in wide container
  • Swirl with a palette knife to make swirls
  • Leave in the freezer for 5 hours minimum
