Jane’s ice-cream is a firm favourite in the Aberdeenshire office. Paired with a waffle cone and a sunny day makes for THE perfect combination.
Ingredients
- 200g blackcurrant
 - 60g granulated sugar
 - tablespoon of cassis
 - 600ml double cream
 - 1 x 397g tin of condensed milk
 
Method
- Heat blackcurrant and granulated sugar in a small saucepan until the fruit skins burst
 - leave to cool and stir in a tablespoon of cassis
 - Whip 600ml double cream into stiff peaks
 - Stir in the condensed milk into cream
 - Alternate layers of ice cream mix with fruit mix in wide container
 - Swirl with a palette knife to make swirls
 - Leave in the freezer for 5 hours minimum
